Ingredients
- 12 ripe passion fruits
- 600 ml cold water
- 60 to 80 g sugar
- Juice of ½ lemon, optional
Method
- 01 Halve the fruits and scoop out the pulp (seeds included).
- 02 Blend briefly with the water, or mash the pulp into the water with a fork.
- 03 Strain for a smoother juice, or leave the seeds if you prefer.
- 04 Sweeten, add lemon if desired. Taste and adjust.
- 05 Serve very cold, with ice.
In season, passion fruit is easy to find at the market. Out of season, frozen pulp remains an honest base for a homemade juice.
