Ingredients

  • 1 chicken, cut into pieces
  • 5 ripe tomatoes, crushed
  • 2 onions, sliced
  • 3 garlic cloves
  • 1 piece of fresh ginger
  • 3 tbsp oil
  • 1 bay leaf
  • Pili-pili, salt and pepper
  • 250 ml water

Method

  1. 01 Season the chicken and brown on all sides in the oil.
  2. 02 Set the chicken aside and sweat the onions in the same pot.
  3. 03 Add the pounded garlic and ginger, then the tomatoes and bay leaf.
  4. 04 Reduce the sauce 12 to 15 minutes until concentrated.
  5. 05 Return the chicken, add water and pili-pili, then cover.
  6. 06 Simmer gently 30 to 35 minutes. Uncover at the end if the sauce should thicken.
