Ingredients

  • 4 very ripe sweet bananas
  • 150 g flour
  • 40 g sugar
  • 1 egg
  • 1 tsp baking powder
  • 1 pinch of salt
  • 1 tsp vanilla or nutmeg, optional
  • Frying oil

Method

  1. 01 Mash the bananas into a smooth puree.
  2. 02 Add the egg, sugar, salt and vanilla. Mix.
  3. 03 Fold in the flour and baking powder to a thick batter that drops from a spoon.
  4. 04 Heat the oil over medium heat. Drop spoonfuls of batter.
  5. 05 Fry 2 to 3 minutes per side until golden. Drain and serve warm.

Ripe banana partly replaces sugar and carries the flavour. This is neither plain fried plantain (makemba) nor a yeasted water dough (mikate).
