Ingredients

  • 400 g grated sweet cassava (or 280 g cassava flour)
  • 3 eggs
  • 150 g sugar
  • 100 ml oil or melted butter
  • 150 ml milk (or coconut milk)
  • 1 packet baking powder (11 g)
  • 1 pinch of salt
  • 1 tsp vanilla

Method

  1. 01 Preheat the oven to 180 °C. Grease a tin.
  2. 02 If using fresh cassava, grate finely and press lightly to remove excess water.
  3. 03 Beat eggs and sugar until pale. Add oil, milk and vanilla.
  4. 04 Fold in the cassava (or flour), baking powder and salt. Mix without overworking.
  5. 05 Pour into the tin. Bake 40 to 50 minutes until a knife comes out clean.
  6. 06 Cool slightly before unmoulding. Serve in slices.

Use only sweet cassava meant for eating. The flour version is more even; fresh grated cassava stays moister.
